Personally, I find the SAP tutorials a great way for beginners to learn Workflow. They take you through step-by-step on how to create a simple Workflow. The Workflow tutorials are available in your on-line help, at http://help.sap.com or on SAPNET.
Note : Sometimes the tutorials make references to menu paths or buttons that do not seem to match the screens that you see. This is probably because the version of SAP you are running and the version that the tutorial was written for are different. As a whole, they are an excellent starting point.
