Other than an SAP course, can you recommend a publication that will provide a step-by-step overview of workflow? I need a resource that will help explain workflow as well as provide the basics for setting it up.

An excellent place to start is http://www.workflowbook.com . This is a book written by SAP's Alan Rickayzen, Jocelyn Dart, Carsten Brennecke and Markus Schneider. These guys are some of the most knowledgeable SAP workflow experts on Earth and is a great introduction to workflow setup, development and administration.
