Is there a way to create a field within SAP query that displays free text associated with an infotype?

Yes and no. You can always add items by writing ABAP code but the maximum size that is displayed in ALV columns is 132. So if your free text was bigger than 132 you would need multiple columns. Unless you know the maximum size beforehand it would be sloppy at best.
