Workflow substitutes in ECC 6

We are using Workflow on ECC 6 to manage approvals for purchasing. The problem is that a senior manager in the organization does not want to receive escalations to his inbox but wants them to go to his delegate instead. Apparently, we sued to have this option on our old version, but with the upgrade to ECC6, no one knows how to set it up. Can you help?
In the ECC 6 system that I have access to, I can go to my inbox under the following menu paths and I can maintain substitutes.

Settings->Workflow Settings->Maintain Substitute.

This setting will allow my items to be seen by my substitute.
