architecture depends on what SAP products you have. For R/3 it is three-tiered, hence the name. The tiers are database, application and presentation.

ASAP methodologies are techniques for rapid SAP implementations.

The testing that you do depends on your industry. Usually, you'd do unit, system and integration testing. There are automated test tools, which, while taking some effort to set up, make regression testing much simpler.
