What's the best way to get bulk data out of my Business Warehouse environment? We want to use some of the aggregated data in BW in another (non-SAP) application. Should I be using an ETL tool like Informatica - our in-house standard - or is there some other way to go about this?

Is the target a single application or multiple applications? Is this a periodic download or strictly one-off? If you're doing this one time only, or the target is a single application, then SAP's open hub interface is probably the simplest and most straightforward way to proceed. But if you're targeting more than one application and planning to do this on a periodic basis, your Informatica ETL tool would give you much more management and control over the process.
